Lemon Radish Pasta
INGREDIENTS
1 bag of radishes (16 oz), chopped into quarters
Olive oil for drizzling + 1/3 c
Salt and pepper
16 oz pasta
Zest of 1 lemon
Juice of 1 lemon
3 Tbsp fresh herbs (thyme, sage, and/or mint etc.)
3 cloves garlic
1 Tbsp onion powder
1/2 tsp cayenne and/or paprika
1 tbsp mustard
1 tbsp honey or syrup
1/2 cup plain yogurt or ricotta cheese
1-2 green onions, chopped, for garnish
Feta or parmesan to garnish
INSTRUCTIONS
Preheat oven to 415F. Toss the radishes with some olive oil and a bit of salt and pepper, spread them on a baking sheet, and roast for about 15 minutes or until they look lightly crisped.
In the meantime, cook pasta according to the package instructions.
Combine herbs, lemon zest and juice, garlic, onion powder, 1/3 c olive oil, salt and pepper, cayenne/paprika, mustard, honey/syrup, and yogurt/ricotta in a blender to make a marinade.
Once all components are finished, toss them all together with green onion, cheese, and additional salt & pepper to liking.
