Lemon Mushroom Protein Pasta
INGREDIENTS
1 block silken tofu
1+ Tbsp garlic powder
1 tsp dijon
1 tsp miso
Juice and zest of 1 lemon
Cayenne
16 oz high protein pasta
Salt + black pepper
Fresh chives, parsley, or basil
1 normal-sized thing of mushrooms
Some butter
Reserved cup of pasta water
INSTRUCTIONS
In a blender, combine tofu, garlic powder, pepper, miso paste, mustard, cayenne, and lemon stuff, until sooooper smooth.
Cook pasta as directed on the package. Reserve a cup of pasta water. Add as much of that cup of water to the sauce as you need to make it silky.
While pasta cooks, heat some butter in a frying pan, add the mushrooms and cook them until they brown a bit and are nice and sweaty. Add whatever herbs you want.
Combine the sauce, pasta, and mushrooms and top with chives and maybe some feta or parm.
